Daily Craving

Today I am having all sorts of cravings :)  Here are my top three...


Every year I tell myself that I am going to buy rainboots.  I don't- and then it rains and pours.

To be more specific, I would like The Wynn to deliver 4 of their amazing pillows to my bed.  Thanks!

Daily Craving

I have decided to add a little tid bit called my "Daily Craving"- craving meaning an edible piece of deliciousness or perhaps a gorgeous accessory that I have just added to my WISH list from Neimans, that I will swear to my hubby that I will wear every day of my life (trust me, its worked in the past).

Here is my craving today that has also been hidden on a second tab on my computer at work for about a week now (Byram knows ;) that I like to glance at oh, about every few hours. In my dreams...hehe.

Homemade Strawberry Shortcakes!

When Marty works during the day on Sundays, I love to spend all day in the kitchen.  Last weekend, I decided to make a pot roast, and for dessert- shortcakes!  As I have stated before, I am not a baker, but these turns out amazing!

Gorgeous strawberries, rinsed off!

Quarter the strawberries and add sugar.

Sift the dry ingredients.

Mix the wet and dry ingredients.  Very stick dough!

The shortcake right out of the oven!

Just mixin' the whipped cream.  It was soooo YUMMY with vanilla and lemon zest.

It is finished when little peaks form.

Just a Simple, Healthy Chicken Dish.

Pan seared chicken nesting in garlic broth, topped with zucchini and asparagus.

Anniversary Dinner!

Marty and I celebrated our 2nd anniversary a little bit early while we were in Disney World, so we decided to cook on the actual night.  We made filet mignons topped with mushrooms and gruyere cheese wrapped in puff pastry with a rosemary port reduction!  It was simply (although not simple to make) delicious!!  Sooo if you tend to not cook so much, this recipe comes with a warning label: its tough to make!

Finely chop the mushrooms.

Season the top and bottom of the filets with salt and pepper.

Finely chop garlic and shallots and make 2 piles.  You will need some for the mushrooms and some for the reduction.


We used puff pastry shells.

Grate the Gruyere!

Roll out the puff pastry a tad.

Get a little dirty and flatten with your hands.

These will be the bottom pieces that the filets lay on.  Bake them first, so they won't get soggy.

Saute butter and olive oil until it's smokin' hot!

Sear the steaks on all sides.

Preeettttyyyy.

For the rest of the puff pastry, cut out the center circles.

So they look like little rings.

Brush on an egg and water mixture so the pastry turns out nice and golden.

You will need two of the centers for later.

The baked "bottoms".

Press down on the centers so the steaks will fit right in!

Saute the garlic and shallots in butter for the mushrooms.

Place the steaks in the "bottoms".

Carefully fit the rings around each steak, trying not to tear the pastry.

Add the mushrooms.


Add the mushrooms on the top of each steak!

Next, add the cheese.

Place a center on top of each steak.  Make a couple of slits in each center so it can breath :)

Brush on some more egg.

Bake in the oven!

While they are baking, add the rest of the garlic and shallots to the pan that you cooked the steaks in.

Add rosemary.

Add the port!

Side garnish :)

TA-DA!! These are right out of the oven!!

We made mashed potatoes as well.  Lay the steak on top.

Spoon over the port reduction.

Just lovely :)
