A Twist on Tradition

If you have been reading my blog, you know that I am a fan of chicken, potatoes, carrots and asparagus. Well this simple dish is all of those traditional things...with a little twist.

I decided to serve the carrot whole, after they had been boiled in thyme, butter and water. The asparagus was just blanched til soft, yet crispy and the chicken was sauteed normally. I served them over mashed potatoes, swimming in a little bit of broth I made out of chicken stock, white wine, bay leaf and lots and lots of garlic. The delicious broth was a nice little twist that gave a punch of fabulous flavor!

Might be the BEST dish we have EVER made.

Blackened Chicken w/Broccoli & Parmesan Bowties

We used the iron skillet to perfect this dish which served as the perfect tool to blacken the chicken, using our own homemade blackening seasoning. The chicken was served our an easy cream sauce mixed with fresh broccoli and LOTS of parmesan cheese.

"Grandma's Oven Fried Chicken" & my delicious carrots!

So sorry that it has been so long since I have posted a blog! I have been doing a lot of cooking, but have sadly been too lazy to blog. haha.
This particular evening, I made oven fried chicken using the recipe from Williams-Sonoma Bride and Groom cookbook. (Can you tell I LOVE this cookbo0k?!) I also made my delicious cooked carrots and potatoes. Yum!!
