Chicken Fried Steak!


 So for those of you who know me, know that I am a meat and potatoes girl! I love chicken fried steak, but have never made it at home...I know, I can't believe it either!  So for dinner the other night, we decided to make the Pioneer Woman's chicken fried steak with mashed potatoes and my veggie dish (that I haven't made in forever!).  Everything was very tasty and hit the spot!!

First off, nothing screams iron skillet like chicken fried steak! This dish definitely made my iron skillet even more "well seasoned"!

Squash for my veggie dish along with...

...zucchini....

...carrots...

...and onion, garlic, bay leaf and chicken stock.

Breading pans with milk + eggs and seasoned flour.

Here is my veggie recipe [which I apologize for not taking a pic of the final product!]:

- 1/2 C yellow squash, sliced & quartered
- 1/2 C zucchini, sliced & quartered
- 1/2 C chicken broth
- 1 bay leaf
- 1/4 C onion, chopped
- 3 garlic cloves, smashed
- S&P to taste, about 1 TBSP
- baking dish

Preheat oven to 350 degrees.  Add vegetables and herb to the baking dish.  Pour chicken broth into the dish. Add S&P to the vegetables.  Cover baking dish with foil and put in oven for about 20 minutes, stirring occasionally. Remove foil and bake for another 15 minutes, stirring occasionally.
Serve and enjoy!
