This is a recipe I came up with just randomly one night. It turned out really delicious and I have already made it quite a few times! My friends Ashlee and Lauren came over one night and they loved it! I hope you try it out and enjoy!

Chop the shallot! |

Chop up the sun-dried tomatoes. |

Saute the diced chicken (this version obviously was not breaded). When I bread the chicken, I bread and brown full chicken breasts, preferably thinly sliced breasts. |

Remove the chicken from the pan and saute the garlic, shallot and sun-dried tomatoes in butter. |

Add the cream and Italian seasoning. |

Add the cooked pasta. |

Recipe:
[serves 2 people]
- 1 shallot, minced
- 3 or 4 garlic cloves, minced
- about 1 tsp dried thyme
- about 1 tsp dried oregano
- 5-8 jarred in oil sun dried tomatoes, chopped
- linguine or bow tie pasta
- 2 chicken breasts, seasoned with S&P
- about 2 TBSP reserved pasta cooking water
- cream, 3 turns of the pan
- 1 TBSP unsalted butter
- olive oil
Heat a saute pan with olive oil, about 2 turns of the pan on medium to high heat. Add the chicken and brown on both sides for about 6-8 minutes. Remove the chicken and set on a plate for later.
Add the butter to the pan and melt. Add the shallot and garlic and saute until the shallot is translucent, then add the sun-dried tomatoes. Stir and saute for a couple of minutes.
Next, add the cream and herbs. Add S&P to taste. Simmer the cream until thick. If it gets too thick, add the reserved pasta water.
Next, add the chicken and pasta to the pan and serve!
