Lemon Roasted Pork Tenderloin + Sesame Green Beans + Home-made Apple Sauce

Snap the ends off the beans.

Place in water and bring to a boil.

Zest 2 lemons.

That is a lot of yummy zest.

Peel and chop up 3 apples- removing the core of course :)

Apples in about 1 inch cubes.

Save the lemons because you will need the juice.

Melt some butter....

Add the apples.

Rub the lemon zest all over the pork tenderloin.

Add some honey to the apples.

Saute until golden brown.

Saute the loin...

...until brown on all sides.

Drain the green beans.

In a small skillet, lightly toast the sesame seeds over a very low heat.  Don't burn them!

Add some oil to a skillet and lightly saute some red pepper flakes.

Add the sesame seeds and the beans.

Mash up the apples.  If you like it chunky, don't mash too much :) P.S.- this potato masher is from Williams Sonoma and is an amazing little tool!
