| Chop some green onions that will be added to the potatoes. |
| Chop some red potaotes in half, or quarter them and place in salted water and bring to a boil. |
| Make the meatloaf goodness with ground beef, chopped onion, egg, breadcrumbs, tomato paste and S&P. |
| Form into 4 cute little loafs. |
| Cook them in a non-stick skillet and brown on both sides. Make a little tent out of foil and lower the heat once browned to cook. |
| Drain the potatoes once they are fork tender. |
| Pretty little meatloaves :) |
| Remove from pan and add butter to make a gravy. |
| Add the potatoes back to the pot and add sour cream. |
| Add onion and garlic to the butter and then add flour to thicken up the sauce. |
| Whisk in beef stock. |
| Add the green onions and season to taste. |
| Add the meat back to the pan to soak up the sauce. |
| I served with the potatoes and thyme carrots. YUMMY! |
