Mini Meat Loaf

Chop some green onions that will be added to the potatoes.

Chop some red potaotes in half, or quarter them and place in salted water and bring to a boil.


Make the meatloaf goodness with ground beef, chopped onion, egg, breadcrumbs, tomato paste and S&P.

Form into 4 cute little loafs.


Cook them in a non-stick skillet and brown on both sides.  Make a little tent out of foil and lower the heat once browned to cook.

Drain the potatoes once they are fork tender.

Pretty little meatloaves :)

Remove from pan and add butter to make a gravy.

Add the potatoes back to the pot and add sour cream.

Add onion and garlic to the butter and then add flour to thicken up the sauce.


Whisk in beef stock.

Add the green onions and season to taste.

Add the meat back to the pan to soak up the sauce.

I served with the potatoes and thyme carrots.  YUMMY!
